- 2 tbsp ghee
- 200g paneer (store bought or home made)
- 1 tsp ground cumin
- 1/2 tbsp cumin seeds
- 1 tsp garlic paste
- 1 tsp ginger paste
- 50g onion sliced
- 1/2 tsp salt
- 200g spinach
- 1/2 tsp turmeric
- 1/2 tsp coriander
- 1/2 tsp garam masala
- 50 ml fresh cream
Heat 1 tbsp of the ghee in a large heavy bottomed fry pan. Slice paneer into equal cubes, sprinkle with ground cumin and toss gently to coat
Add the paneer to hot ghee and cook until lightly golden on all sides.
Remove paneer from the pan, leaving the ghee in the pan. Fry the cumin seeds, onion, ginger and garlic and fry for 2-3 minutes until fragrant.
Reduce the heat, add the spinach leaves, season with salt and leave to wilt for 2 minutes.
Transfer spinach mixture to blender or food processor and blend, adding water if needed until smooth.
Heat remaining ghee in the same pan and add remaining spices until cooked out – about 1 minute
Add pureed spinach back into pan and cook for 2-3 minutes. Add fresh cream, stir through and serve with cauliflower rice.
Notes
This can be made with meat as well! Just replace the paneer with lamb or chicken and precook in the same way!
You can add chili in with the other spices if you like a bit of heat!
